Butterfly pea flowers turn indigo when steeped, then shift violet when lemon touches them. This kombucha is a science experiment and a meditation, all in one bottle.

The Story

We grow butterfly pea along the fences and trellises of the garden. The flowers are dried in shade and steeped slowly. When the fermentation is done, the colour is so electric it looks unnatural. It is not. It is just what happens when you do not rush nature.
